Fluffy Pancakes

 Min Original Recipe Yield 8 pancakes

 Ingredients
 3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
cooking spray

Directions

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mix

Dark Chocolate Cake - Mom's 50th Cake

Prep Time: 30 Min Cook Time:30 Min Ready In: 1 Hr 20 Min Original Recipe Yield 3 - 9 inch round pans Ingredients 2 cups boiling water 1 cup unsweetened cocoa powder 2 3/4 cups all-purpose flour 2 teaspoons baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup butter, softened 2 1/4 cups white sugar 4 eggs 1 1/2 teaspoons vanilla extract Directions Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside. In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Kneaders Cinnamon Syrup

1 cup sugar 1/2 cup light corn syrup 1/4 cup water 3/4 teaspoon ground cinnamon 1 (5 ounce) can evaporated milk In a saucepan, combine the sugar, corn syrup, water and cinnamon. Bring to a boil over medium heat stir for 2 minutes. Remove from heat and let cool for 5 minutes. Stir in evaporated milk. YUM!

Cinnamon Roll Chex Mix

1 1/4 cups brown sugar 1 tsp. cinnamon 1/2 cup butter 1/4 cup corn syrup 1/2 tsp baking soda 1 tsp vanilla 1 box Rice or Corn Chex 1/2 cup white chocolate chips Pour cereal into a very large mixing bowl and set aside. Combine brown sugar, cinnamon, butter and corn syrup in a saucepan. Bring to a boil, stirring constantly. Remove from the heat and stir in soda and vanilla. Pour over cereal and stir lightly until all pieces are coated. Spread onto a greased cookie sheet with sides. Bake at 250 degrees for about 30 minutes, stirring every 10 minutes. Pour onto waxed paper to cool. Melt white chips in a glass bowl in the microwave at 50% power, stirring every 30 seconds. Drizzle over cooked Chex Mix. Enjoy! Compliments of Jen and Todd Jensen

Ham and Cheese Sliders - AMAZING!


Ham and Cheese Sliders
adapted slightly from the Recipe Club

24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce (you probably could half this...I had plenty extra)
1 Tablespoon poppyseeds
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1 pinch salt
  • 5 tablespoons butter, cut into pieces
  • 2/3 cup milk
  • 1 cup white sugar
  • 2 eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a standard muffin tin with 12 paper cupcake liners. Combine flour, baking soda, and salt in a bowl; set aside.
  2. Heat the butter and milk in a small saucepan over low heat until the butter has melted. Beat the sugar, eggs, egg yolk, and vanilla with an electric mixer in a large bowl until it has thickened slightly and is lighter in color. Gradually beat in the flour mixture on low speed until just incorporated. Slowly pour in the hot milk, beating until just combined.
  3. Divide batter evenly between cupcake liners. Bake until toothpick inserted into center comes out clean, about 20 minutes. Cool cupcakes in pan for 10 minutes. Transfer cupcakes to a cooling rack to cool completely.

Butter Cream Icing - Mom's 50th


Buttercream Icing

"An easy to make egg-free frosting that works great for decorating cookies for holidays, birthdays and parties. When you need to add coloring to icing, use color paste. If you use liquid coloring, you may need to add more confectioner's sugar."

Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups confectioners' sugar
  • 2 tablespoons milk

Directions

  1. In a large bowl, cream together the butter, shortening, and vanilla. Blend in the sugar, one cup at a time, beating well after each addition. Beat in the milk, and continue mixing until light and fluffy. Keep icing covered until ready to decorate.
