Brie, Apple and Cranberry Grilled Cheese

BRIE, APPLE AND CRANBERRY GRILLED CHEESE


INGREDIENTS:

  • 4 sturdy slices sourdough bread (not super soft)
  • 4 tablespoons butter
  • 8 ounce wedge of brie (chilled), rind removed, cut into thin pieces
  • 1 medium honeycrisp apple, cut into thin slices
  • 1/2 cup whole berry cranberry sauce

DIRECTIONS:

  1. Butter the four slices of bread.  
  2. Heat a large skillet over medium-high heat.  Place two slices of bread butter-side-down on the skillet.  Top each slice with brie pieces, sliced apple and cranberry sauce.  Place the other slices of bread on top- butter-side-up. Place a lid  on top of the skillet.
  3. Reduce heat to medium and let the sandwiches toast on the bottom.  When the cheese looks like it's beginning to melt, take the lid off the skillet and use a spatula to check under the sandwiches.  When they're golden brown, flip them gently.  Toast the other side of the sandwich until golden brown.  Serve and eat immediately with a glass of chilled Sauvignon Blanc!

BLT Grilled Cheese

BLT GRILLED CHEESE

Ingredients
  • 4 slices thick cut bacon, cooked
  • 4 slices sourdough bread
  • butter
  • 4 teaspoons Dijon mustard
  • 1 large ripe tomato, sliced
  • 2 ounces of cheddar cheese
  • 2 handfuls of lettuce (Spinach is my new favorite)
Instructions
  1. Heat a large skillet over medium low. To make each sandwich, spread one side of a bread slice with butter. Spread the other side of the buttered slice with 1/2 teaspoon of Dijon mustard, then layer on half of the cheese, 2 strips of cooked bacon, tomato slices, and a small handful of lettuce. Spread another slice of bread with Dijon mustard, then place it mustard-side down on top of the lettuce. Butter the remaining topside of the bread. Repeat for the second sandwich.
  2. Once the skillet is warmed up, cook the sandwiches on each side, until the bread is golden and the cheese melted, about 3 to 5 minutes per side. Keep it on low and it will melt your cheese perfectly!

Directions

  1. Cut all rolls in half. Place roll bottoms in 9x13-inch pan.
  2. Place equal amounts of ham on each roll bottom. Top with Gruyere.
  3. On each of the roll tops, spread a generous amount of the cream cheese spread. Return the tops to the bottoms making sandwiches.
  4. In a separate bowl, mix together the butter, Worcestershire sauce, onion and Parmesan cheese. Pour over your sandwiches and let sit for at least 20 minutes. (You can make these ahead of time and allow to sit in fridge overnight.)
  5. Place sandwiches, covered in foil, in a preheated 350 degrees F oven. Bake for 20 minutes or until warmed through. Enjoy!
