Creamy Rice Pudding

Recipe by  
"This is my mom's recipe for Rice Pudding. It's the best I've ever tasted and it gets rave reviews from everyone I serve it to. Sprinkle with nutmeg or cinnamon, if desired. For creamier pudding, use short or medium grain rice."

Directions

  1. Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
  2. In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.

Snow Cocoa

THIS IS THE MOST AMAZING DRINK YOU WILL EVER HAVE.  IT IS VERY RICH AND AMAZING.
Snow Cocoa
Ingredients -
  • 2 cups whipping cream
  • 6 cups milk (I usually use whole milk or 2%)
  • 1 tsp vanilla extract
  • 12 oz pkge white chocolate chips (try to use Ghiradelli if you can – YUM!)
Directions -
  1. Combine all ingredients in a slow cooker.
  2. Heat on low for 2-2 1/2 hours or until chocolate is melted and mixture is hot.
  3. Stir well to blend.
  4. Enjoy from a Snowman mug on a chilly day.

Wassail

I discovered this recipe on Holiday Food Sample day at Lee's Marketplace

2 cans frozen light grape juice concentrate
1 1/2 cups sugar
3 cups water
3 cinnamon sticks
4 whole cloves

Combine above ingredients.

Add:
1 cup orange juice
4 cups apple juice or cider
1 cup frozen lemonade concentrate
2 cups pineapple juice
2 quarts of water

Mix together and steam for 30 minutes.

Cracker Candy

1/4 (16 oz.) package of saltine crackers

1/2 pound butter

1 cup brown sugar

2 cups chocolate chips

3/4 cups chopped walnuts (optional)

 

Preheat oven to 425 degrees.  Melt butter in a saucepan over medium heat.  Add the sugar and stir occasionally until mixture comes to a boil.  Boil for 3 minutes and continue stirring to keep from burning. 

 

Place crackers on a cookies sheet in a single layer and drizzle with sugar mixture.  Bake at 425 degrees for 5 minutes or until edges begin to turn brown.  Melt chocolate chips.  Remove from the oven and spread with chocolate chips on top.  Sprinkle the nuts on top if desired and gently press into the chocolate.  Allow to cool and break into pieces.  Refrigerate until ready to serve, about 1 hour.

Rice Pudding

1 quart milk
1 cup rice
1 1/2 pints of whipping cream
1 tsp. vanilla
3/8 cup sugar
Frozen raspberries
Danish Dessert
2 1/2 cups of water

Boil milk and rice.  Reduce and simmer for 30 minutes or more with the lid ajar until the milk is absorbed.  Add sugar, vanilla and let cool.  Whip the cream.  Add the rice.

Sauce:  Add cold water and danish dessert.  Heat until boiling, about 1 minute.  Add raspberries.  Let cool.

Cracker Candy

This is one of my very favorite Christmas recipes.  Sounds like a crazy combo but it is the perfect combination of sweet and salty!

1/4 package of saltines (1 sleeve)
1/2 lb butter
1 cup brown sugar
2 cups chocolate chips
3/4 cup chopped nuts

Preheat oven to 425 degrees.  Melt butter in a pan and add sugar.  Bring to a rolling boil and boil for 3 minutes stirring constantly.

Place crackers on a greased cookie sheet in a single layer.  Pour mixture on top and spread to cover all the crackers.  Bake for 5 minutes or until edges begin to brown.

Remove from oven and sprinkle with chocolate chips (or melt before).  Spread over the top.  Sprinkle with nuts and press into chocolate.  Cool 1 hour and break into pieces.
