Our Best Bites Sugar Cookies

Sugar Cookies
Call me biased, but this the best sugar cookie recipe out there. Soft, thick, and chewy - perfect for decorating, too!

Ingredients
  1. 1 cup real butter (no substitutions!) at room temperature
  2. 1 cup sugar
  3. 1 egg (make sure to use a large or extra large egg)
  4. 1 1/2 teaspoon almond extract (or other flavor of your choice, like vanilla)
  5. 3 C flour, lightly spooned into measuring cups and leveled (don’t scoop it!)
  6. 1 1/2 teaspoon baking powder
  7. 1/2 teaspoon salt
Instructions
  1. Cream butter and sugar until light and fluffy- about 2 minutes. Add in egg and extract and mix to incorporate.
  2. In a separate bowl combine flour, baking powder and salt. A very important note: It’s important to correctly measure your flour or you will end up with a dry, crumbly dough. Never, ever use your measuring cup to scoop up the flour. Use a regular sized spoon and spoon the flour into the cup and then level it off with a knife.
  3. Slowly add the flour mixture to the butter mixture and mix until completely combined.
  4. Refrigerate for at least one hour or (and this is our preferred method), lay a sheet of parchment paper on the counter, roll the dough to the desired thickness, and top with another layer of parchment. Refrigerate for about 30 minutes.)
  5. When you’re ready to roll out dough lightly sprinkle flour onto your work surface and roll out dough with a rolling pin.
  6. Bake at 350 for 8-12 minutes. The baking time really depends on how you like them. If you like them really and slightly chewy, about 8-9 minutes does it. If you like them slightly crisp and buttery, then go for 10-12.

Mint Chip Sugar Cookies

Melt in your mouth sugar cookies filled with irresistible mint chips! Sure to please a crowd and thankfully are quicker than decorating traditional sugar cookies.

Serves: 4 dozen
Ingredients
  • 1 c. butter, softened
  • 1½ c. sugar
  • 2 eggs
  • 1½ tsp. peppermint extract
  • a few drops of green green food coloring 
  • 3 c. flour (possibly more?  Judge by how the cookies feel)
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cream of tarter
  • ¼ tsp. salt
  • 6 oz. Andes Creme de Menthe Baking Chips
  • 6 oz. semi-sweet chocolate chips
Instructions
  1. Cream butter and sugar for about three minutes. It should be fluffy.
  2. Add eggs, green food coloring and peppermint extract. Cream for another 2-3 minutes.
  3. Measure dry ingredients in a separate bowl or sifter. Add dry ingredients to creamed mixture. Mix until combined.
  4. Add mint and chocolate chips. Gently stir to until incorporated.
  5. Line baking sheet with parchment paper. Drop cookies using a 2 Tablespoon size cookie scoop.
  6. Bake at 350 degrees for about 10 minutes. Watch for the cookies to begin cracking. Let cool on baking sheet for a few minutes. Transfer to cookie rack and finish cooling.
  7. Note: If you choose to use a smaller cookie scoop reduce baking time to 8 minutes.

Zucchini Cookies

Zucchini Cookies
 
This is a DELICIOUS way to use up some zucchini! These cookies are soft and cake like and taste wonderful!
Ingredients
  • 1½ cups flour
  • 1 cup sugar
  • ½ teaspoon Baking Soda
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¾ teaspoon cinnamon
  • ¾ cup shortening
  • 1 egg
  • 1 cup grated zucchini
  • 1¾ cups quick oats
FROSTING
  • ½ cup butter, softened
  • 3 Tablespoons milk
  • 2 teaspoons vanilla
  • 3-4 cups powdered sugar
Instructions
COOKIES
  1. Preheat oven to 400 degrees F.
  2. Combine flour, sugar, baking soda, salt, nutmeg and cinnamon together in a large bowl and stir to combine ingredients well. Cut in shortening. Beat in egg until well combined. Add zucchini and oats and beat until evenly mixed in.
  3. Spoon drops of cookie dough onto greased cookie sheet.
  4. Bake at 400 degrees F for 8-10 minutes. Let cool.
FROSTING
  1. Cream butter in a medium bowl. Add remaining ingredients and beat until smooth. Add more milk and/or powdered sugar until desired consistency is reached.
  2. Frost cookies once they are completely cooled and sprinkle the tops with a little nutmeg.

Grandma Helen's Soft Molases Cookies

3/4 cup butter
1 cup sugar
1/4 cup light molases
1 beaten egg
2 cups flour
1/2 tsp soda
2 tsp soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves

Beat butter, sugar, and molasses until fluffy.  Add egg, flour, soda, salt, cinnamon, ginger and cloves.  Use one cup of flour and mix until smooth.  Roll into balls and roll in sugar.  Bake for 8 mintues at 350 degrees.

Pumpkin Butterscotch White Chocolate Cookies

Pumpkin Butterscotch White Chocolate Cookies
Makes 32 cookies
Adapted from Fresh Every Day: More Great Recipes from Foster’s Market
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup butterscotch chips
3/4 cup butter, softened
2/3 cup sugar
2/3 cup light brown sugar, packed
1 egg
2/3 cup canned pumpkin
1 cup rolled oats
1 1/2 cups white chocolate chips
1 cup walnuts, chopped
In a food processor fitted with a metal blade, pulse together flour, baking soda, baking powder, spices and butterscotch chips until chips are finely ground.  Set aside.
In the bowl of an electric mixer, cream together butter and sugars until fluffy, about 3 minutes.  Add the egg and pumpkin and mix to combine.  Slowly add the flour mixture into the wet ingredients and stir until fully incorporated.  Add oats, white chocolate and walnuts and mix.  Cover bowl with plastic wrap and refrigerate dough for at least an hour.
Preheat oven to 350 F.  Drop rounded tablespoons of dough onto baking sheets lined with parchment paper, spacing 2 inches apart.  Bake until cookies are golden, 13-15 minutes.  Cool cookies on baking sheets before transferring to wire racks to cool completely.

Fresh Mint Chocolate Chip Cookies by Paul Dunn



YOU WILL WANT TO DOUBLE OR TRIPLE THIS RECIPE!!!!!


Fresh Mint Chocolate Chip Cookies
Servings: 8
Yield: 24 Cookies



1 1/3 cups sugar
3/4 cup butter, softened
1 tablespoon mint leaves, finely chopped (or 1 teaspoon dried mint leaves)
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
2 cups flour
1 (10-ounce) package mint chocolate chips

1. Heat oven to 350 degrees.

2. Beat sugar, butter, mint leaves, and egg until well blended.

3. Stir in baking soda, salt, and flour until well mixed.

4. Fold in the mint chocolate chips.

5. Drop dough by rounded tablesppons about two inches apart unto an ungreased cookie sheet. Bake 11 to 13 minutes until golden brown. Cool 3 to 4 minutes, the remove from cookie sheet to a wire rack.

Caramel Pretzel Chocolate Chip Cookies

Caramel Pretzel Chocolate Chip Cookies
Recipe by: Amber (Dessert Now, Dinner Later!)
  • 1/2 cup (1 stick) butter, room temperature
  • 1/4 cup plus 2 Tbsp sugar
  • 1/4 cup plus 2 Tbsp brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 cups flour
  • 3/4 cup stick pretzels, broken into thirds
  • 1/2 cup caramel bits
  • 1/2 cup semi-sweet chocolate chips

  1. In a stand mixer, cream butter with sugars.  Add vanilla & egg.  Incorporate & scrape bowl.
  2. Combine salt, baking soda, & flour.  Gradually add to wet mixture.  Mix until combined.
  3. Fold in broken pretzels, caramel bits, & chocolate chips with a spatula.
  4. Spoon onto a baking sheet with parchment paper. 
  5. Bake at 350*F for 11-12 minutes.

Orange Creamsicle Cookies


Orange Creamsicle Cookies

2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1/2 cup sugar
1/2 firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons orange zest (for me that was the zest of 2 oranges)
2 cups white chocolate chips

Preheat oven to 375 degrees.

In a small bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in orange zest and white chocolate chips.

Drop rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry. Bake 8 - 10 minutes or until golden brown around edges. Do not overcook! Cookies will be plump. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.

Snickerdoodles


These have perfectly crispy edges with soft centers!  YUM!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
  3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
  4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

Easy Sugar Cookies - No Cookie Cutters!


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
  4. Makes 48 cookies.

Jodi’s Chocolate Chip Cookies

3/4 cup sugar

1 cup packed brown sugar

1 cup butter (do not substitute)

2 eggs

1/2 tsp. salt

1 tsp. soda

1 tsp. vanilla

3- 3 3/4 cup flour

chocolate chips

 

Cream butter and sugars until fluffy.  Add remaining ingredients and mix well.  Chill dough and drop onto lightly greased cookies sheet.  Bake at 375 degrees for 7-9 minutes.

Snickerdoodles

1 1/2 cup sugar

1/2 cup butter

1/2 cup shortening

2 eggs

2 3/4 cup flour

2 tsp. cream of tartar

1 tsp. baking soda

1/4 tsp. salt

3 T sugar

1 T cinnamon

 

Heat oven to 375 degrees.  Mix sugar, butter, shortening, and eggs.  Add cream of tartar, flour, soda and salt.  Shape dough into 1 1/2” balls.  Mix 3 T sugar and 1 T cinnamon.  Roll balls into sugar mixture.  Place 2 inches apart on a cookie sheet.  Bake 8-10 minutes.

Lisa’s Brown Sugar Oatmeal Cookies

1 1/2 cup brown sugar

1 cup butter, softened

1 egg

2 tsp. grated lemon peel

2 cups Old Fashioned Rolled oats

1 1/2 cup flour

1 tsp. baking powder

1/2 tsp. salt

 

Heat oven to 375 degrees.  Combine brown sugar, butter, egg and lemon peel.  Mix 1-2 minutes.  Reduce speed, add remaining ingredients.  Bake for 10-14 minutes.

The Best Rolled Sugar Cookies

These still work well when the eggs are substituted for flax seed and they stay soft for days!
 
Ingredients
  • 1 1/2 cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
Directions
  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.

Paige’s Famous Chocolate Chip Cookies

In the mixer:

1/2 cup butter

1/2 cup shortening

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 1/2 tsp vanilla

1 pkg chocolate chips

In the bowl:

2 cups flour

1 tsp soda

1/2 tsp salt

 

In mixer cream your sugars, butter and shortening really well.  Mix together ingredients in a bowl with a fork while mixture in the mixer sits.  Go back to mixer and add in egg and vanilla.  After mixture is completely mixed slowly add in dry ingredients from the bowl.  Then add chocolate chips.  Bake for 9 minutes at 350 degrees.  They are done even if they do not look done!  Pull them out as soon as you see even a tiny browning along the edges of the cookies.  These are DELICIOUS!  Thanks Paige!

Laurie's Chocolate Chip Cookies

1 cup shortening
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp water if needed
2 1/2 cups flour
1 tsp salt
1 tsp baking soda
1 cup chocolate chips

Cream shortening and sugars. Add eggs and vanilla and beat well.  Add dry ingredients alternately with water.  Mix well.  Add chocolate chips and mix.  Bake at 350 degrees for 10 minutes.

Sugar Cookie Bars

By far the easiest way to enjoy sugar cookies without all of the work!


Sugar Cookie Bars

1 cup butter; room temp.
2 cups sugar
4 eggs
2 tsp vanilla
5 cups flour
1 tsp salt
1/2 tsp soda

Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well. In a separate bowl combine flour, salt & soda & stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan). Bake at 375 degrees for 10-15 min, until light golden brown or until a toothpick comes out clean. Cool completely and frost.

Frosting

1/2 cup butter; room temp
1/2 cup shortening
1 tsp vanilla
pinch of salt
4 cups powdered sugar
5 Tbsp milk
food coloring (if desired)

For frosting combine butter and shortening until smooth andcreamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined, then add milk & mix until smooth and spreading consistency. Spread over cooled cookies.
