Mexican Lasagna


Ingredients

  • 1 pound lean ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 1 (14 ounce) can peeled and diced tomatoes with juice
  • 10 (6 inch) corn tortillas
  • 1 cup prepared salsa
  • 1/2 cup shredded Colby cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
  3. Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Ranch Burgers


Ingredients

  • 2 pounds lean ground beef
  • 1 (1 ounce) package ranch dressing mix
  • 1 egg, lightly beaten
  • 3/4 cup crushed saltine crackers
  • 1 onion, chopped

Directions

  1. Preheat the grill for high heat.
  2. In a bowl, mix the ground beef, ranch dressing mix, egg, crushed crackers, and onion. Form into hamburger patties.
  3. Lightly oil the grill grate. Place patties on the grill, and cook 5 minutes per side, or until well done.
  4. Makes 8 Burgers.

Overnight Blueberry French Toast with Blueberry Syrup

This is amazing - make sure to do the syrup too!
Overnight Blueberry French Toast with Blueberry Syrup
French Toast:
  • 12 slices bread, cut into cubes (french or Texas toast work well)
  • 1 (8-ounce) package cream cheese, cut in cubes
  • 1 cup blueberries (fresh or frozen)
  • 12 large eggs
  • 1/3 cup maple syrup
  • 2 cups milk (I use 1 cup milk and 1 cup cream)
Syrup:
  • 1 cup sugar
  • 1 cup water
  • 2 Tablespoons cornstarch
  • 1 cup blueberries (fresh or frozen)
  • 1 Tablespoon butter
  1. Arrange 1/2 of the bread cubes in a greased 9 x 13 pan.
  2. Sprinkle cream cheese cubes and blueberries evenly over the bread cubes.
  3. Top with remaining bread cubes.
  4. Mix together eggs, milk, and syrup.
  5. Pour over bread cubes and cover pan with foil. Let chill in refrigerator overnight.
  6. Bake covered with foil at 350 degrees for 30 minutes. Remove the foil and bake for another 30 minutes or until fluffy and golden. Top with sauce. Serves 8.
Sauce: Cook water, sugar, and cornstarch until thickened. Stir in blueberries and simmer for 10 minutes. Add butter and stir until melted. Serve over the french toast.

Seasoned Potatoes

ULTRA EASY

7-8 medium Potatoes, cleaned and cut into bite sized pieces
1 cube butter
1 package Ranch Dressing Mix

Toss cubed potatoes with melted butter and dry dressing mix.  Bake uncovered in a 9x13 pan at 375 degrees for 45 minutes to an hour.  Turn on the broiler for the last 5 minutes.

Ingredients
  • 1/3 cup butter or margarine
  • 1/2 cup packed brown sugar
  • cups Cheerios® cereal
  • 1/2 cup Craisins
Directions
  1. In 3-quart saucepan, melt butter over low heat. Stir in brown sugar. Cook, stirring constantly, until thick and smooth.
  2. Stir in cereal. Cook 2 to 3 minutes, stirring constantly, until cereal is coated.
  3. Spread mixture in thin layer on ungreased cookie sheet. Cool 1 hour. Crumble into bite-size pieces. Stir in raisins and candies. Store in airtight container.

Snickerdoodles


These have perfectly crispy edges with soft centers!  YUM!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
  3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
  4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

Easy Sugar Cookies - No Cookie Cutters!


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
  4. Makes 48 cookies.

Leprechaun Pie



 * Instant Oreo Pudding Mix
* Green Food Coloring
* Milk
* Whipped cream
* Oreo and sprinkles (optional)
* Foil-wrapped chocolate coin 
* Clear plastic cup

Place chocolate coin in the bottom of the cup.  Prepare Pudding according to package directions.  Add desired amount of Food Coloring.  Put pudding into cups, top with cream, and sprinkles!

Shamrock Shakes


 

Shamrock Shake Recipe:

  • 2 cups Vanilla Ice Cream
  • 1 cup Milk
  • 6-8 drops of Green Food Coloring
  • 1/4 teaspoon Mint Extract
Directions:
Place all ingredients in blender and mix. Top with whipping cream and a chocolate gold coin.

Wassail

I discovered this recipe on Holiday Food Sample day at Lee's Marketplace

2 cans frozen light grape juice concentrate
1 1/2 cups sugar
3 cups water
3 cinnamon sticks
4 whole cloves

Combine above ingredients.

Add:
1 cup orange juice
4 cups apple juice or cider
1 cup frozen lemonade concentrate
2 cups pineapple juice
2 quarts of water

Mix together and steam for 30 minutes.
