The Best Chocolate Sheet Cake. Ever.


Recipe: The Best Chocolate Sheet Cake. Ever.

Ingredients

  • FOR THE CAKE:
  • 2 cups Flour
  • 2 cups Sugar
  • 1/4 teaspoon Salt
  • 4 Tablespoons (heaping) Cocoa
  • 2 sticks Butter
  • 1 cup Boiling Water
  • 1/2 cup Buttermilk
  • 2 whole Beaten Eggs
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • _____
  • FOR FROSTING:
  • 1/2 cup Finely Chopped Pecans
  • 1-3/4 stick Butter
  • 4 Tablespoons (heaping) Cocoa
  • 6 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 1 pound (minus 1/2 Cup) Powdered Sugar

Preparation Instructions

Note: I use an 18x13 sheet cake pan.
In a mixing bowl, combine flour, sugar, and salt.
In a saucepan, melt butter. Add cocoa. Stir together.
Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.
In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.
While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.
Cut into squares, eat, and totally wig out over the fact that you’ve just made the best chocolate sheet cake. Ever.

Vanilla Cake Recipe (and frosting!)


Easy Vanilla Cupcakes in a jar
 
1 1/2 C, unbleached all-purpose flour
1 C. Sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 C. unsalted butter, softened
1/2 C. Sour Cream
2 Large Eggs
1 1/2 teaspoon vanilla extract
 
Preheat oven to 350 Degrees. Line muffin tin with paper liners.
 
Wisk together dry ingredients. Add the butter, sour cream, eggs and vanilla to the dry ingredients. Beat together on medium speed until smooth and satiny, about 30 Sec. Scrape down sides of bowl until no flour pockets remain.
 
Batter will be thick.
 
Divide batter evenly among the cups. Bake 20-24 minutes until the tops are pale golden toothpick inserted in the center comes out clean.  Use a skewer or paring knife to lift out cupcake an cool completely on a wire rack.
 
Hint for richer  cupcake replace the 2 eggs w/ 1 egg and 2 yokes.
 
 
 
Almost-Homemade Buttercream Frosting
 
1 container (13 ounces) Marshmallow Fluff
1 1/4 C. of unsalted butter – softened and cut in to 1 inch pieces
1 Teaspoon vanilla extract  (or use Almond Extract!)
1/2 powdered sugar, plus extra if needed
 
Spoon the marshmallow fluff into a large bowl. Beat with an electric mixer on low. Gradually add the butter pieces, eating well after each addition, until smooth. Add Vanilla and powdered sugar.  Beat until well incorporated. Add more powdered sugar if necessary, to adjust the texture.

Orange Creamsicle Cookies


Orange Creamsicle Cookies

2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1/2 cup sugar
1/2 firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons orange zest (for me that was the zest of 2 oranges)
2 cups white chocolate chips

Preheat oven to 375 degrees.

In a small bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in orange zest and white chocolate chips.

Drop rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry. Bake 8 - 10 minutes or until golden brown around edges. Do not overcook! Cookies will be plump. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.

Orange Creamsicle Buddies




Orange Creamsicle Buddies
Yields 8 cups


Ingredients:
8 cups Rice Chex Cereal
1 1/2 cups white vanilla baking chips
1/4 cup butter 
3 Tbsp heavy cream 
1 1/2 Tbsp orange zest (this is the zest of about 1 1/2 large oranges)
1 tsp orange extract
1 1/2 cups powdered sugar


Directions:
Measure 8 cups Rice Chex Cereal into a very large mixing bowl, set aside.  In a microwave safe mixing bowl, combine vanilla baking chips, butter, cream and orange zest.  Microwave mixture on 50% power in 30 second intervals, stirring with a fork after each interval, until melted and smooth.  Stir in orange extract.  Pour mixture over Chex Cereal and gently toss mixture with a rubber spatula until evenly coated.  Pour coated cereal into a 2 gallon ziploc bag, add powdered sugar and seal bag.  Shake mixture until evenly coated with powdered sugar.  
For a crispier version: preheat oven to 275 degrees.  Divide prepared Orange Creamsicle Buddies in an even layer among two cookie sheets and bake 20 minutes, stirring once halfway through baking.  Allow to cool and store mixture in an airtight container.

Coca Cola Cake



Preheat oven to 350, and grease up (I like Crisco) a 9×13 (or so) pan.
Mix together:
  • 2cups flour
  • 2cups sugar
  • 1/2tsp salt
  • 1tsp baking soda
  • 1/2tsp cinnamon

In a saucepan over medium high heat stir this up good until it boils:
  • 1 cup butter
  • 1/4 cup unsweetened cocoa powder
  • 1 cup coca-cola (from bottle is my preference!)
  • 1/2 cup buttermilk

Take off heat and add that to the flour mix & whisk until combined.  Then add:
  • 2 eggs
  • 1tsp vanilla extract

Mix, put in pan, bake it for about 30minutes. Yes, it’s a quick bake. Don’t over-bake it!
When cake is nearly done make the glaze by mixing in saucepan:
  • 1/2cup butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup coca cola

Once that boils, remove and slowly stir in 4cups of confectioners’ sugar until nice and smooth. Then add in about a cup of chopped pecans, and give it a stir.
Once cake is done and out of oven (toothpick should come out clean), pour this warm glaze right over the top of the hot cake!
Wait.
Let it set… let it cool for a few minutes at least…
Enjoy warm or cold. (next day/etc. feel free to microwave for a few seconds to warm it up… so good)
