Zucchini Cookies

Zucchini Cookies
 
This is a DELICIOUS way to use up some zucchini! These cookies are soft and cake like and taste wonderful!
Ingredients
  • 1½ cups flour
  • 1 cup sugar
  • ½ teaspoon Baking Soda
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¾ teaspoon cinnamon
  • ¾ cup shortening
  • 1 egg
  • 1 cup grated zucchini
  • 1¾ cups quick oats
FROSTING
  • ½ cup butter, softened
  • 3 Tablespoons milk
  • 2 teaspoons vanilla
  • 3-4 cups powdered sugar
Instructions
COOKIES
  1. Preheat oven to 400 degrees F.
  2. Combine flour, sugar, baking soda, salt, nutmeg and cinnamon together in a large bowl and stir to combine ingredients well. Cut in shortening. Beat in egg until well combined. Add zucchini and oats and beat until evenly mixed in.
  3. Spoon drops of cookie dough onto greased cookie sheet.
  4. Bake at 400 degrees F for 8-10 minutes. Let cool.
FROSTING
  1. Cream butter in a medium bowl. Add remaining ingredients and beat until smooth. Add more milk and/or powdered sugar until desired consistency is reached.
  2. Frost cookies once they are completely cooled and sprinkle the tops with a little nutmeg.

The Best Hamburger Recipe

The Best Hamburger Recipe (and secret sauce)
Ingredients:
Burger:
1 lb ground beef (I used 85/15- you want a fattier meat to make a juicier burger!)
sesame seed buns
1/2 cup Monterrey jack cheese, grated
1/4 cup BBQ sauce
seasoned salt to taste
cracked black pepper
onion powder
Secret Sauce:
3/4 cup of mayo
1/4 cup ketchup
1/4 cup relish
2 tablespoons Worcestershire sauce
seasoned salt
Directions:

  1. Combine the ground beef, grated cheese, bbq sauce, and seasonings. Shape patties that are about 1 inch thick. With the 1 pound of ground beef I made 5 large patties.
  2. Turn grill up to high and let it get hot.
  3. Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it doesn’t burn. Then flip the burger over and cook until done.
  4. For the sauce: Combine all ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
  5. Assemble the burgers and serve with the special sauce, avocado, lettuce, tomato, cheese, pickles and your other favorite hamburger toppings!

Pesto Chicken Pasta Bake

PESTO CHICKEN PASTA BAKE
You will love how easy and delicious this chicken dish is. We love the right amount of pesto flavor too!

Ingredients
  • 8 ounces pasta, I used mostaccioli
  • 10 ounces diced chicken, I used precooked grilled chicken strips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 8 ounces ricotta cheese
  • 1/4 cup prepared pesto
  • 1/3 cup heavy whipping cream
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup dry bread crumbs
  • 1/4 cup melted butter
Instructions
  1. Cook pasta according to package directions. If using precooked chicken, thaw and diced into small pieces. If using raw chicken cook thoroughly and dice.
  2. In a large bowl combine the shredded cheese, sour cream, ricotta cheese, pesto, whipping cream and parmesan cheese.
  3. Add cooked pasta and cooked chicken to the cheese mixture. Toss to coat evenly.
  4. Transfer to a greased 9 x 9 casserole baking dish.
  5. Combine melted butter and dry bread crumbs and sprinkle over the top.
  6. Bake uncovered at 350 degrees for about 25 to 30 minutes or until golden brown.

Ingredients
  • 4 slices thick cut bacon, cooked
  • 4 slices sourdough bread
  • butter
  • 4 teaspoons Dijon mustard
  • 1 large ripe tomato, sliced
  • 2 ounces of cheddar cheese
  • 2 handfuls of lettuce (Spinach is my new favorite)
Instructions
  1. Heat a large skillet over medium low. To make each sandwich, spread one side of a bread slice with butter. Spread the other side of the buttered slice with 1/2 teaspoon of Dijon mustard, then layer on half of the cheese, 2 strips of cooked bacon, tomato slices, and a small handful of lettuce. Spread another slice of bread with Dijon mustard, then place it mustard-side down on top of the lettuce. Butter the remaining topside of the bread. Repeat for the second sandwich.
  2. Once the skillet is warmed up, cook the sandwiches on each side, until the bread is golden and the cheese melted, about 3 to 5 minutes per side. Keep it on low and it will melt your cheese perfectly!

Pumpkin Spice Candied Nuts

Pumpkin Spice Candied Nuts

Ingredients
1 1/2 cups raw almonds, whole
1 1/2 cups raw pecans, whole
1/4 cup water
3/4 cup brown sugar
1/4 cup granulated sugar
3/4 tsp ground cinnamon
1/4 tsp ground all spice
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger

1. In a large saucepan, over medium-low heat, combine all ingredients except nuts. Stir until all sugar and spices have dissolved completely.
2. Add in almonds and pecans, making sure all nuts are coated with the sugar mixture.
3. Once coated, stir constantly for about 9-10 minutes, or until there is no more liquid in the pot.
4. Pour nuts onto a sheet of parchment paper to cool (make sure they are flat and in a single layer, otherwise the nuts will stick to each other).
5. Enjoy!

S'mores Pizza


Ingredients
  • 2 cups graham cracker crumbs
  • 21/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup light brown sugar
  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 4 cups miniature marshmallows
  • 2 cups milk chocolate chips, divided
Instructions
  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, combine graham cracker crumbs, flour, baking soda, and salt; set aside.
  3. In another bowl, beat the butter and sugars together until creamy and smooth.
  4. Add in egg and vanilla extract and mix until combined.
  5. Slowly add the dry ingredients and mix until just combined.
  6. Roll out dough onto a 13-inch pizza pan sprayed with nonstick cooking spray.
  7. Bake for 10-15 minutes, or until the middle is set. Remove from oven.
  8. Cover crust in mini marshmallows and 1 cup chocolate chips then return to the oven for 3 minutes or until marshmallows turn golden brown. Remove from oven.
  9. Melt remaining chocolate chips in the microwave and drizzle over the top of the pizza.
  10. Sprinkle on extra graham cracker crumbs, if desired.

Baked Spaghetti


Ingredients

1 (16 ounce) package spaghetti
1 pound ground beef
1 medium onion, chopped
1 (26 ounce) jar meatless spaghetti sauce
1/2 teaspoon seasoned salt
2 eggs
1/3 cup grated Parmesan cheese
5 tablespoons butter, melted
2 cups small curd cottage cheese
4 cups shredded mozzarella cheese

Directions

  1. Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce and seasoned salt; set aside.
  2. In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat.
  3. Place half of the spaghetti mixture in a greased 13-in. x 9-in. x 2-in. baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers. Cover and bake at 350 degrees F for 40 minutes. Uncover; bake 20-25 minutes longer or until cheese is melted.

Homemade Big Mac


Homemade Copycat Big Mac Recipe:(Makes 4 burgers)
Ingredients:Burger:4 sesame seed hamburger buns
4 additional bottom halves of hamburger buns
Special sauce (recipe below)
Shredded lettuce
2 pounds ground beef, split into 8 patties and grilled/cooked
Dill pickle slices
8 slices cheddar cheese
Special Sauce:1/2 cup mayonnaise
2 Tablespoons French dressing
4 teaspoons sweet pickle relish
1 Tablespoon minced white onion
1 teaspoon white vinegar
1 teaspoon sugar
1/8 teaspoon salt
Directions:Mix all sauce ingredients together until combined and let chill in the fridge.  To assemble, starting from the bottom:  bottom bun, special sauce, shredded lettuce, hamburger patty, two dill pickles, slice of cheese, additional bottom bun, special sauce, shredded lettuce, hamburger patty,  two dill pickles, top bun.

Cheesy Ranch Chicken

Cheesy Ranch Chicken



Serves: 8

Ingredients:
8 chicken breasts, thawed
1½ cups ranch dressing
1 cup Parmesan cheese
1 cup shredded cheddar cheese
1 (1 ounce) packet ranch dressing mix
Directions:
Preheat oven to 350 degrees. Cover cookie sheet with aluminum foil. Pour ranch dressing
into a medium sized bowl and set aside. In a separate bowl, combine Parmesan cheese,
cheddar cheese, and the packet of ranch dressing mix. Mix until well combined. Dip thawed
chicken breasts into the bowl of ranch and place on the covered cookie sheet. Sprinkle the
top of the chicken breast with the cheese and ranch seasoning mixture until you can't see
the chicken breast. Place the ranch and cheese covered chicken breasts into the oven and

bake for 30 minutes or until the chicken is cooked all the way through.

Brownie Batter Dip

    Ingredients

    Instructions

    1. In a stand mixer, whisk together the cream cheese and the butter.
    2. Add 2 cups of the powdered sugar, 1 cup at a time, and 1 tbsp. milk.
    3. Add the flour, cocoa powder, vanilla, brown sugar, and 1 more tbsp. of milk if needed. Whisk until all smooth.
    4. Add remaining powdered sugar and milk alternately until dip reaches your desired consistency.

    Baked BLT Dip

    Ingredients

    1
    pound bacon, cooked
    1
    cup mayonnaise
    1
    cup sour cream 
    8
    ounces cream cheese, softened
    1 1/2
    cups cheddar cheese 
    1
    tomato, seeded and chopped 
    1/4
    cup chopped green onions
    Additional green onions, cooked bacon, tomato, and lettuce for garnish, if desired

    Directions

    • 1 Preheat oven to 350°F degrees.
    • 2 Mix mayonnaise, sour cream, and cream cheese in a bowl until thoroughly combined. Crumble bacon into mixture and stir. Add cheddar cheese, green onions, and tomato and mix well. Pour into a shallow dish or pie pan and bake for 20 minutes or until bubbling. Garnish with additional green onions, tomato, and crumbled bacon. Serve with corn chips.
