Cheesy Vegetable Chowder


Cheesy Vegetable Chowder Recipe:
Ingredients:
2 chicken or beef bouillon cubes
1 cup water
1 cup diced celery
2 cups diced potatoes
1 cup diced carrot
1 (10 oz) package frozen mixed vegetables (I usually buy the broccoli, carrot, and cauliflower combo)
1 can Cream of Chicken soup (I used the (98% fat free kind)
1 can of milk (once you add the cream of chicken, use that can to measure your milk)
1 lb (16 oz) Velveeta cheese (I used the 2% milk kind), cubed
Directions:
Place your bouillon cubes, water, celery, potatoes, and carrots in a large pot and bring to a boil. Boil until bouillon cubes have dissolved. Add your bag of frozen veggies and turn heat down to low (I usually set my burner at 3 out of 10). Place lid on top of pot and let simmer for 30-40 minutes (add water if necessary). Add cream of chicken soup, milk, and Velveeta cheese. Stir constantly until cheese is all melted. Serve with bread bowls or warm rolls.

Old Fashioned Cornflake Candy

Ingredients:
1 C. sugar
1 C. light corn syrup
1 C. peanut butter
6 C. corn flakes **



Directions:

1.  Cook the corn syrup and sugar {on medium heat} until the sugar dissolves.  


2.  Add peanut butter and stir until smooth.  


3.  Gradually add corn flakes, 1 C. at a time, while mixing.


4.  Remove from heat, then spoon mixture onto wax paper {or aluminum foil} and let cool completely.

**The official recipe calls for 6 C. of corn flakes, but you can use anywhere from 4-6 C. depending on how much you'd like to make and how crunchy or "gooey" you'd like your candy {use more cornflakes for more crunch}.  For this post and these pictures, we only used 4 C. of corn flakes, so keep that in mind when making yours.

Directions

  1. Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Grilled Brown Sugar Butter Pineapple

Like I said, the ingredient list is simple, basic and almost ridiculous with how easy it is. Brown sugar, melted butter, and pineapple. By the way, we don’t core our pineapple when we grill it. It makes it a little more firm and easier to grill when you leave the core in.
Mix the butter and brown sugar together, grill the pineapple on a medium high flame, turning once until it is fragrant, and beginning to show grill marks, remove and then immediately brush each side with with the butter mixture. Fall in love!

yield: 1 pineapple
serving size: 2 slices per person
brown sugar glazed pineapple is perfect for any summer day.
ingredients
  • 1 pineapple, peeled and sliced
  • 3/4 stick of unsalted butter
  • 3/4 cup brown sugar
instructions
  1. in a bowl, melt the butter at 20 second increments in the microwave. remove from the microwave and add the brown sugar, stirring quickly to evenly combine, this will take a minute to absorb the sugar.
  2. heat a grill to medium high heat and add the pineapple, cooking for a few minutes or until grill marks begin to appear. flip and cook again on the other side. remove from the grill and quickly brush the butter brown sugar mixture over each side. serve immediately.
