Skinny Pina Colada Popsicles

INGREDIENTS
- 1 ⅓ cups canned diced pineapple, in juice
- ¼ cup pineapple juice (from the can of pineapple)
- ¼ cup sugar
- ½ cup light coconut milk
- 1 tsp coconut extract
- 1 Tbsp dark rum (optional)
DIRECTIONS
- Cut the pineapple into chunks. Puree the pineapple along with the juice in a blender with sugar, light coconut milk, coconut extract and rum if using, until smooth. Pour into popsicle molds and freeze.
