Caramel Pretzel Chocolate Chip Cookies

Caramel Pretzel Chocolate Chip Cookies
Recipe by: Amber (Dessert Now, Dinner Later!)
  • 1/2 cup (1 stick) butter, room temperature
  • 1/4 cup plus 2 Tbsp sugar
  • 1/4 cup plus 2 Tbsp brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 cups flour
  • 3/4 cup stick pretzels, broken into thirds
  • 1/2 cup caramel bits
  • 1/2 cup semi-sweet chocolate chips

  1. In a stand mixer, cream butter with sugars.  Add vanilla & egg.  Incorporate & scrape bowl.
  2. Combine salt, baking soda, & flour.  Gradually add to wet mixture.  Mix until combined.
  3. Fold in broken pretzels, caramel bits, & chocolate chips with a spatula.
  4. Spoon onto a baking sheet with parchment paper. 
  5. Bake at 350*F for 11-12 minutes.

Baked Banana Chips



First, we sliced bananas as thinly as possible and placed in a bowl.

We covered the bananas with water, and 3 TBL lemon juice.

Second, we ladled the banana slices out and placed them on a paper towel to blot excess water.

Third: We took the paper towel off, and arranged the bananas on a cookie sheet on parchment paper.

Fourth: Bake at the very lowest setting of your oven.

I used 170 degrees for about 5 hours.  After 5 hours, I flipped the bananas over, so the underside could get crispy as well, then I put back in the warm oven, turned the oven off, and let them sit in the oven overnight.  By morning, both sides were crispy.
BBQ Bacon Burgers 
Ingredients:
1/4 cup mayonnaise
1/4 cup barbecue sauce
4 bacon strips, cooked and crumbled
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons steak seasoning (I used McCormick Montreal seasoning)
1 pound ground beef

4 slices Monterey Jack cheese
4 hamburger buns, split
Other hamburger toppings of your choice (tomatoes, lettuce, pickles, onions, etc)
Directions:
Mix together mayonnaise and barbecue sauce in a small bowl. In another bowl, combine the crumbled bacon, 2 tablespoons mayonnaise mixture, onion and steak seasoning; add the ground beef and mix well (it worked best when I just used my hands to incorporate all the seasonings). Shape into four patties.
Grill burgers, covered, over medium heat for 5-7 minutes on each side or until done. Place a piece of cheese on top. Cover and cook 1-2 minutes longer or until cheese is melted. Spread remaining mayonnaise mixture over buns; add a burger and other toppings of choice.
Makes 4 big burgers.

"This recipe came from my step-mom in Dallas, Texas. They like it hot so they put in a few extra jalapenos."
INGREDIENTS:
1 (8 ounce) package cream cheese
1/2 cup butter
1/2 cup milk
1 (16 ounce) package frozen corn
1 red bell pepper, diced
8 fresh jalapeno peppers, diced
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a saucepan over medium-low heat, melt the cream cheese and butter, and mix with the milk until smooth and bubbly.
3.In a medium casserole dish, mix the frozen corn, red bell pepper, and jalapeno peppers. Pour in the cream cheese mixture, and toss to coat.
4.Bake 35 to 45 minutes in the preheated oven, until bubbly and lightly brown.

Chicken Cordon Bleu Pasta

Yield: 8-10 servings
The flavors of Chicken Cordon Bleu come together in a pasta dish.
Ingredients
    Alfredo Sauce
  • 1 1/4 cups Cache Valley Shredded Mozzarella Cheese, divided
  • 3/4 cup Parmesan cheese, grated, divided
  • 1/2 cup Cache Valley Unsalted Butter
  • 2 garlic cloves, minced
  • 2 cups heavy cream
  • 1/4 teaspoon white pepper
  • Pasta
  • 10 to 12 ounces penned pasta, cooked
  • 1 chicken breast, cooked and diced into 1/4-inch strips
  • 3/4 cup diced, cooked ham
  • 1/4 cup bacon, cooked and crumbled
  • additional optional ad-ins:
  • sliced green onions
  • steamed broccoli
  • fresh sliced mushrooms
Instructions
  • Prepare the Alfredo sauce: Melt the butter in a pot over medium heat. Add the white pepper, heavy cream and minced garlic. Bring the mixture to a simmer. Reduce heat to medium low. Add the Parmesan & Mozzarella, reserving about 1/3 of each cheese. Simmer for 5 – 10 minutes, stirring frequently.
  • Set the oven to broil. Coat a 9×13-inch baking dish with cooking spray. Add the cooked pasta, chicken, bacon, and any additional ingredients. Pour Alfredo sauce over the top, and gently stir to combine everything. Top with the reserved cheeses.
  • Place the baking dish on the oven’s middle rack. Broil for 3-5 minutes, or until the cheese bubbles and turns light brown.

French Bread Pizza - SO EASY, SO YUMMY!


All you need is a loaf of French Bread, pizza sauce {I use Prego Traditional spaghetti sauce}, grated cheese {I use a 5 cheese mix}, and whatever toppings your lil' heart desires!!!!


After you slice your french bread spread sauce over each piece.  You can use a lot or a little...depends on what you like.



Sprinkle with cheese...we like lots and lots of cheese in my household {maybe that's why we are all so cheesy?!?}.


Add toppings.  I usually mix it up between just cheese and pepperoni {I have picky eaters in my house}!!


Bake at 400 degrees {farenheit} for 15-20 minutes {or until cheese is browned and meat is curled at edges}.

    INSTRUCTIONS

    1. WAFFLES: In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. Make a well in the center of the mixture; set aside. In a separate bowl, whisk together eggs, buttermilk, oil and vanilla. Pour into the bowl with the dry ingredients. Stir just until moistened; batter will be slightly lumpy. Preheat a waffle iron and spray with nonstick spray. Pour batter into waffle iron grid and close the lid. Bake until waffles are completely done- follow your waffle iron's instructions. Use a fork to remove finished waffles. Repeat with remaining batter. Keep waffles warm until ready to serve (a 200 degree oven is perfect).
    2. CINNAMON TOPPING: In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside
    3. CREAM CHEESE TOPPING: In a medium, microwave-safe bowl- heat butter and cream cheese for 30 to 60 seconds; just until melted. Stir together until smooth; whisk in powdered sugar andvanilla extract.
    4. When ready to serve, place waffle on plate, drizzle cinnamon topping, then drizzle cream cheese topping. Use as much or as little as you'd like. Serve immediately.

    Homemade Corn Dogs

    Directions

    1. In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs and milk.
    2. Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into frankfurters. Roll frankfurters in batter until well coated.
    3. Fry 2 or 3 corn dogs at a time until lightly browned, about 3 minutes. Drain on paper towels.

    Pumpkin Waffles with Apple Cider Syrup

    Directions

    1. Preheat a waffle iron according to manufacturer's instructions.
    2. Combine the flour, baking powder, cinnamon, allspice, ginger, salt, and brown sugar in a mixing bowl. In a separate bowl, stir together the pumpkin, milk, and egg yolks. Whip the egg whites in a clean dry bowl until soft peaks form.
    3. Stir the flour mixture and 1/4 cup melted butter to the pumpkin mixture, stirring just to combine. Use a whisk or rubber spatula to fold 1/3 of the egg whites into the batter, stirring gently until incorporated. Fold in the remaining egg whites. Cook waffles according to manufacturer's instructions.
    4. To make the syrup, stir together the sugar, cornstarch, and cinnamon in a saucepan. Stir in the apple cider and lemon juice. Cook over medium heat until mixture begins to boil; boil until the syrup thickens. Remove from heat and stir in the 2 tablespoons of butter until melted. Serve warm.
