Tiffany Brady's White Chili

White Chili

3 cans Great Northern Beans (rinsed and drained)
3 cups cubed cooked Chicken Breast (I actually used a rotisserie just to cut out on time but it's great either way obviously)
1 jar Alfredo Sauce (I added two since that's what Corey's mom does)
2 cups Chicken Broth
1-2 cans 4 oz. Chopped Green Chillies (I just did one, but would love it with two also I'm sure)
1 1/2 cups Corn
1 cup Shredded Monterey Jack Cheese
1 cup Shredded Pepper Jack Cheese (I just used the fiesta shredded cheese pack that has monterey jack and few others)
1 cup Sour Cream
1 small Yellow Pepper chopped (I left this out just because they were so dang expensive lol)
1 small onion Chopped
3 Garlic Cloves minced
1 tablespoon Cumin
1-1 1/2 teaspoons Cayenne Pepper

Just throw everything in a crockpot and stir together. Cook on low for 3-4 hours. It says it yields 12 servings (1 cup each).


Tiffany won the ward Chili cook-off with this recipe!  IT IS AMAZING!!!!

1/2 cup shortening
1/2 cup butter, softened

DIRECTIONS:
1.In a large bowl, cream together the butter, shortening, and vanilla. Blend in the sugar, one cup at a time, beating well after each addition. Beat in the milk, and continue mixing until light and fluffy. Keep icing covered until ready to decorate.

Licorice Caramels

"Caramels made with sweetened condensed milk and corn syrup are flavored with anise extract and colored black."
INGREDIENTS:
1 cup butter
2 cups white sugar
1 (14 ounce) can sweetened condensed
milk
1 cup corn syrup
1/8 teaspoon salt
1 teaspoon anise extract
black paste food coloring
DIRECTIONS:
1.Line a 9x9 inch dish with buttered foil.
2.In a large saucepan over medium heat, melt butter. Stir in sugar, milk, corn syrup and salt. Bring to a boil, stirring frequently. Continue to heat, without stirring, to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in anise and food coloring. Pour into prepared pan. Let cool completely, several hours.
3.To cut, turn out of pan and peel away foil. Cut with a buttered knife. Wrap pieces in waxed paper or candy wrappers.

INGREDIENTS:
3 cups all-purpose flour
1 (.25 ounce) package active dry yeast
2 tablespoons vegetable oil
1 teaspoon salt
1 tablespoon white sugar
1 cup warm water (110 degrees F/45
degrees C)
DIRECTIONS:
1.Combine flour, salt, sugar, and yeast in a large bowl. Mix in oil and warm water. Spread out on a large pizza pan. Top as desired.
2.Bake at 375 degrees C (190 degrees C) for 20 to 25 minutes.

"The classic moist pumpkin bread from Down East is spiced with cinnamon, ginger, nutmeg and cloves. This bread improves with age, so plan to make it a day ahead if possible."
INGREDIENTS:
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
2.In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
3.Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

Crock Pot Cream Cheese Chicken Chili



Crock Pot Cream Cheese Chicken Chili
(that's a mouthful!)
2 chicken breasts, still frozen
1 can Rotel tomatoes
1 can corn kernels, do not drain
1 can black beans, drained and rinsed
1 pkg. Ranch dressing mix
1 T cumin
1 t chili powder
1 t onion powder
1 8-oz pkg. cream cheese
_________
Put the chicken in the crock pot.
Top with the tomatoes, corn,
the drained and rinsed beans,
ranch dressing, cumin, onion and chili powders,
stir to combine then top with the cream cheese.
Cook on low for 6-8 hours, stirring one or twice
 to blend in the cheese.
Shred the chicken into large pieces
and serve over rice.
Can also serve in tortillas or taco shells.
Serves 4

"Potato flakes are the secret ingredient that make the saltine crust on this simple chicken-fried chicken dish so tasty."
INGREDIENTS:
30 saltine crackers
2 tablespoons all-purpose flour
2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1 egg
6 skinless, boneless chicken breast
halves
 
2 cups vegetable oil for frying
DIRECTIONS:
1.Place crackers in a large resealable plastic bag; seal bag and crush crackers with a rolling pin until they are coarse crumbs. Add the flour, potato flakes, seasoned salt, and pepper and mix well.
2.Beat egg in a shallow dish or bowl. One by one, dredge chicken pieces in egg, then place in bag with crumb mixture. Seal bag and shake to coat.
3.Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
4.Fry chicken, turning frequently, until golden brown and juices run clear, 15 to 20 minutes.

Soda Pop Ice Cream

Soda Pop Ice Cream Recipe
Ingredients
  • 4 C cold soda pop, any flavor
  • 1 14 oz. can sweetened condensed milk
  • 1 C whole milk
Instructions
  • Mix all ingredients together and pour into 2 qt. ice cream maker.
  • Freeze as directed
  • Place in freezer after finished to harden up

Lasagna Soup

2 tsp olive oil
1 1/2 lbs. Italian sausage or Hamburger
chopped onions
4 cloves of garlic
2 tsp. Oregano
1/2 tsp. dried crushed red pepper flakes
2 T. tomato paste
1 28 oz. diced tomatoes
2 bay leaves
6 cups chicken broth
1/2 cup chopped basil leaves, if fresh
salt and pepper

Cheesey YUM to top soup with:
8 oz. ricotta
1/2 cup parmesan cheese
1/4 tsp salt and pepper (each)
2 cups shredded mozzarella cheese

Brown meat, drain.  Add onions, garlic, oregano, red pepper flakes.  Cook a couple of minutes.  Add tomato paste, bay leaves and chicken broth.  Simmer 30 minutes.  Cook noodles separately and add.  If freezing don't cook noodles completely!  They will be too mushy!  Top with Cheesy Yum to serve.

Ham and Swiss Casserole

1 8 oz. Egg noodles, cooked and drained
2 cups Ham, cubed
2 cups swiss cheese, shredded
1 cup of Cream of Mushroom Soup
1 cup Sour Cream

Mix together.  Bake at 350 degrees for 45 minutes.  Don't completely cook the noodles if you are freezing the recipe.

"This mixture of basil, lemon juice, mustard and garlic adds a wonderful texture and flavor to grilled shrimp. You won 't want to prepare them any other way."
INGREDIENTS:
2 1/2 tablespoons olive oil
1/4 cup butter, melted
1 1/2 lemons, juiced
3 tablespoons Dijon mustard (such as
Grey Poupon Country Mustard™)
1/2 cup minced fresh basil leaves
3 cloves garlic, minced
salt to taste
white pepper
3 pounds fresh shrimp, peeled and
deveined
skewers
DIRECTIONS:
1.In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
2.Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
3.Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.

THIS IS THE MOST AMAZING DRINK YOU WILL EVER HAVE.  IT IS VERY RICH AND AMAZING.

Ingredients -
  • 2 cups whipping cream
  • 6 cups milk (I usually use whole milk or 2%)
  • 1 tsp vanilla extract
  • 12 oz pkge white chocolate chips (try to use Ghiradelli if you can – YUM!)
Directions -
  1. Combine all ingredients in a slow cooker.
  2. Heat on low for 2-2 1/2 hours or until chocolate is melted and mixture is hot.
  3. Stir well to blend.
  4. Enjoy from a Snowman mug on a chilly day.

Poppyseed Bread



Poppyseed Bread from the not so Desperate Housewives
Ingredients
    Bread:
  • 3 cups flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 3 eggs
  • 1 1/8 cups cooking oil
  • 2 1/4 cups sugar
  • 1 1/2 cups milk
  • 1 1/2 T. poppy seeds
  • 1 1/2 tsp almond extract
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp butter flavoring extract (or 1 1/2 tsp melted butter can be substituted)
  • Glaze:
  • 1/4 cup orange juice
  • 3/4 cup sugar
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1/2 tsp butter flavor extract (or 1 1/2 tsp melted butter can be substituted)
Instructions
  1. For the bread: Preheat oven to 350 degrees. Mix all of the ingredients together. Pour into greased and floured baking pans. Makes 6 small loaves or 2 large loaves. Bake at 350 for 50-60 minutes for large pans and less for smaller pans. If you have a dark metal pan make sure to bake it for less time at a lower temperature. I overdid this batch a little bit because I used a dark pan. I like the disposable foil bread pans the best.
  2. For the Glaze: Pour all ingredients into a small saucepan and let cook on stove on medium heat until sugar dissolves. Remove bread from pans and pour glaze over warm bread. Use knife or spatula to bring the glaze that has run off up and over the warm bread until it stays on.

AMAZING CUPCAKES


 EASIEST NO-FAIL CUPCAKE RECIPE
  • 1 cake mix (I use yellow cake mix or white cake mix)
  • 3 eggs
  • 1 tsp almond flavoring
YES, THAT’S IT, no water or oil or other liquids!  All you do is mix the ingredients together and fill cupcake liners halfway.  Bake in a 350 degree oven for 14 minutes, remove and let cool. 

I modified this buttercream recipe from the America’s Test Kitchen Cookbook.  I love this recipe because it’s buttery, and have a very well-rounded taste.  Here it is:
ALMOND BUTTERCREAM FROSTING
  • 2 tablespoons milk
  • 1 teaspoon almond flavoring
  • pinch of salt
  • 2 1/2 sticks salted butter, softened
  • 2 1/2 cups confectioners’ sugar
Beat this mixture for 5-7 minutes until light and fluffy.  ENJOY and try not to eat the whole bowl.
PIPING BAGS & TIPS:
When you are done with the light and fluffy buttercream mixture, add the frosting to a piping bag.  My favorite one is from Orson Gygi and it’s the 14″ bag.  With that I use one of two tips.  My very favorite tips for this are the ATECO brand #808 the simple circle one or #826 which is the star looking tip.  Depending on my mood, I use either of these.

Slow Cooker Pesto Ravioli



Slow Cooker Pesto Ravioli
 
Ingredients
  • 1 cup ricotta cheese
  • ½ cup pesto
  • ¾ cup grated parmesan cheese, divided
  • 1 cup shredded mozzarella, divided
  • 1 (24 oz) jar pasta sauce (I used Kirkland Marinara)
  • 1 (25 oz) pkg. frozen ravioli
Instructions
  1. In a bowl, stir together the ricotta, pesto, and ½ cup parmesan until combined; set aside.
  2. Add 1 cup of the pasta sauce on bottom of slow cooker. Spread to coat the bottom of the slow cooker.
  3. Next, place ½ of the bag of frozen ravioli in the slow cooker.
  4. Take ½ of the ricotta mixture and spread it on top of the ravioli and the sprinkle with ½ cup of the mozzarella.
  5. Repeat layers again (1 cup sauce, remaining frozen ravioli, remaining ricotta, remaining mozzarella).
  6. Spread remaining sauce over top. Cook on low for 3 hours.
  7. Remove lid and add sprinkle with remaining ¼ cup parmesan. Replace lid and cook an additional 30 minutes on low. Serves 6.
