Freezer Mashed Potatoes
5 lbs Yukon Gold Potatoes, peeled and quartered
4 ounces cream cheese, softened
4 ounces sour cream
1 tsp salt
1 tsp onion salt
1/4 tsp pepper
2 T butter
Peel potatoes. Place in a crockpot. Add water until covered. Cook on LOW 7 hours or on HIGH 4 hours. Drain water, then mash until smooth. Add remaining ingredients, beat until fluffy. Place in 2 8x8 greased pans, dot with butter. Bake at 350 degrees for 30 minutes.
Freezing Directions:
Do not bake! Instead put in desired size portions into bags and freeze. To serve: Thaw. Bake at 350 degrees for 30 minutes. Double bake time if not thawed.
